We decided to experiment with some new, super easy cupcake flavours today! For our customers, we ALWAYS bake everything from scratch, but for home cooking, we LOVE trying out different versions of the classic cake mix cupcake. Today we tried one that we just had to share with everyone. It doesn't get much easier than this!! You wouldn't believe how moist the cream soda makes the cake. You really need to try it to believe it!
Chocolate Cream Soda Cupcakes (or cake!) with Cookies and Cream Chocolate Frosting
1 pkg chocolate fudge cake mix (plus all required ingredients to prepare cake)
1 can cream soda
1 cup sugar
1 cup water
1 can prepared chocolate frosting
5 oreos, finely crushed
24 full oreos
Prepare chocolate cake mix according to directions. However, substitute cream soda for any water that the recipe calls for. Bake cake or cupcakes according to baking times on box. This recipe works best with jumbo cupcakes.
In a saucepan, whisk sugar and water together until sugar is completely saturated. Without stirring, bring mixture just to a boil, then remove from heat. Let cool completely. Pour leftover cream soda into syrup. You can use as much or as little as you want depending on your tastes. This step is totally optional depending on how much of a cream soda taste you want.
Brush syrup on top of cake/cupcakes. You can poke holes in cake with toothpicks to allow the syrup to soak into the cake.
To prepare frosting, empty can of icing into a bowl. Add crushed oreos and blend on high until icing has whipped up. Pipe frosting onto cupcakes in whatever style you prefer. Top each cupcake with an oreo and enjoy!!
